What is Brisket?
Brisket is a cut of beef taken from the breast section of the cow, beneath the first five ribs and behind the foreshank. It’s known for its rich flavor and firm texture—ideal for low and slow cooking methods. Brisket has a strong presence in traditional BBQ cuisine, especially in Texas-style smoking where the bark, smoke ring, and tenderness are crucial to the perfect bite.
At our market:

How to Cook Brisket the Right Way
Because brisket is a tougher cut, it’s best cooked low and slow. The two most popular methods are:
- Smoking — Adds deep flavor and tenderizes over time
- Braising/Slow Cooking — A convenient option that guarantees juicy results
Low and slow cooking allows the connective tissue (collagen) in brisket to break down into gelatin, which creates that melt-in-your-mouth texture that BBQ lovers crave. A well-cooked brisket has a beautiful smoke ring, a flavorful bark, and slices like butter.
Let’s walk through two of our favorite brisket recipes: one for the slow cooker and one for the smoker.
